This is one of the major concerns we get with customers when we bring in oysters. "Only eat oysters in the months that have an "r" in them". You should be concerned!! Here's what you should know. Our oysters this time of year are either brought in from the super cold waters off the Coast of Canada, or brought in off of raft raised farms. The reason you shouldn't eat dredged oysters from the warmer waters in the Carolina's and further south, is due to lack of care in handling the oysters once dredged. It is ok to eat them if you know your harvesters and trust their handling practices. Always ask your "fish guy" for tags from the oyster handlers. If they can provide you with a tag (and they should always be able to) then you are good to trust them! We have some great, safe oysters in today along with mussels!
